I am trying my hand at canning. I've made squash relish, corn salsa, and a few other things. The corn salsa is my favorite so far! ImageImageImage

Looking good. I have cucumbers and squash, out the yen yang. Been canning mock apple rings and still going. Purple hulls, are getting ready. Tomatoes are a flop. Squirrels eating them like crazy.

I have been having a great year with the garden and orchard. I have done blackberry, plum, and strawberry jelly. Canned squash, potatoes, green peas, green beans, and peaches. I am having the best peach crop I have had in years. Image

Wow! Nothing better than spiced peaches.
Been canning mock apple rings. But the neighbors are getting them faster than I can put them up.

Nice y’all are getting it done. The wife has put up several jars of blueberries cooked down either for preserves, pie stuffing or jelly. We also been preparing tomatoes for salsa. Up next will be bread and butter pickles that everyone fights for. They just eat them by the bowl full instead of putting on a sandwich. Will be doing them in quart, half gallon and galling jars this time.

I have been putting up mock apple rings. Purple hulls, we're ready to pick yesterday. When I got home and went to the garden. I found that the deer had hit me Monday, night. Ate all the purple hulls, pawed all cucumber plants up and destroyed 18 tomato plants. No more gardens for me. Back to the farmers market next year.

This is at our new residence. The Pearl River Management, is right across the road. Primitive weapon and bow hunting only. They also destroyed a neighbors garden.

You know it's strange the deer don't bother my peas , but the coons destroy corn not this year didn't plant any , potatoes didn't do well we have canned 118 quarts of green beans ,and 68 quarts of purple hull peas ,crowded peas are about a week out looking good , okra is coming in now ,squash and tomatoes doing well have 12.bushel of peas to shell this morning ImageImageImage

Peel them and cut In to 1" pices put into jars 1 tsp salt cover with water leave 1" head space process at 10 lbs for 40 minutes

Yea it's pretty large about 1 1/2 acres but we put up enough to last a year and give the kids and .neighbors some sold $300 worth of peas yesterday helps with the seed,fertilizer and chemicals since I don't work I have a lot of time and I enjoy working a garden like deer hunting ,fishing or any other hobby you get what you put into it

I knew I wasn't going to have time to do much with a garden this year since my sister and I are cleaning out my mom's house in order to sell it. I have to spend every Saturday driving 2 hours round trip and several hours there working. Sooooooo, all I have are two tomato plants which are loaded to the gills, and 3 beds of peas and 3 beds of corn. It's doing pretty good and as much as I can handle right now this year.
The rest of y'all are making me smile. Love good old fashioned food preservation.

Can't believe the deer completely destroyed mine. The neighbor behind me has his not 75 yards from mine and they haven't touched his. Three other neighbors have not been hurt either. Just me and one more were wiped clean.

My garden flopped, the squash bugs destroyed my squash after about 2 weeks of getting good squash out of it then we had that stupid tropical storm come thru and flood it then the next day temps.in the 100 and it just steamed most of.my tomato plants but im still getting okra and some beans and the tomato plants are starting to produce in tthis heat.
There is room for all gods creatures right next to the mashed potatoes and gravy!!
