Cornbread for One

Cornbread for One

First thing is you need a seasoned 6 inch cast iron skillet!
start pre heating the oven to 400

2/3 cup cornmeal
2 tbs flour
1tsp sugar
small pinch of salt
a couple of grinds from the pepper mill

Mix all dry ingredients well

to this add
1 small egg
1 tbs oil/lard
Enough whole or buttermilk to make a slightly soupy mix

Take skillet and rub down with oil or lard and set on burner about a tbs maybe more
bring oil in skillet up to a low fry temperature and pour in the cornbread mixture
Let sit on burner 45 seconds and put in hot oven
cook 30+ minutes until done.


Serve with any hearty soup/stew and enjoy
