Where can I find this locally? Or can you?
Also what about cures and casings for summer sausage?

Don't think he handles the cheese but for everything else. Rebel Butcher Supply, you must order online this time of year. The store is closed to public sale during deer season. Bass PRO also carries casings and seasonings.

I use www.waltonsinc.com for a lot of my seasonings for deer processing. I think the hi temp cheese is about $6lb.

What was used before high temp. I still use cheddar, I cut my cheese a little larger so as the sausage smokes, the cheese melts. But still leaves little chunks. Never had a complaint. In fact, everyone prefers it over the high temp.
