Deer Roasts

Do y'all keep your deer roasts whole to cook, or do you break them up into smaller pieces of meat ? I've got 4 or 5 roasts I need to either grind or vacuum seal whole ..

I was thinking crock-pot ...

What do you mean by roasts, whole hind quarter or did you section them? I mean did you take them off the bone by muscle section. I like to cut the hind quarter across the grain into three sections, leaving the bone in.

i sectioned them.. what I"m calling the "roast" is the big 1/2 moon shaped HQ muscle that comes out in one big piece. It actually is made up of 3 muscles, but if you break it out any further it would be too small

I ended up needing a few more steaks last night, so I cut one into steaks. it was actually as tender, or more tender, than the backstrap..

Yeah gtk, that one piece cut into steaks is fabulous & like you said more tender than the back strap.
I get three roasts off the hind quarter, but the one you speak of is always used for steak.

I keep the roast off a couple of deer each year and use for jerky or cook in the crock pot with taters carrots and onions

Leave em' whole. If I want to cut them for jerky, stew meat, steaks, etc...I can always do it later. Hard to put them back together if you decide you just want a roast.

We keep.those and the.blade off the shoulder as roast good stuff
