Baby Lima Bean Soup

Sherrie, is gone to sit with a sick grand daughter. So I got nothing to do but keep warm and cook.

1 medium rutabaga peeled & cut into 1 inch cubes
3 carrots peeled & diced 1 inch thick
1 medium onion chopped
1 lb or more chicken breast tenders cut into 2 inch pieces
1 can sliced stewed tomatoes
1 Tbs roasted garlic from jar
1 tsp chile powder
1/2 tsp dried oregano
1 tsp coarse black pepper
1/2 tsp red pepper flakes
4 chicken bouillon cubes
1 lb dried baby lima beans


Pour beans & all other ingredients into a crock pot, including the juice from the tomatoes. Add water to cover about two inches above ingredients. Set to high and cook 5 to 7 hours or until all vegetables and beans are tender.
For extra flavor, pour liquid from tomatoes into the crock. Then place tomatoes on a foil lined baking pan, place in a 350* oven until tomatoes are charred around the edges. The char adds great flavor.
