I have done the beer can venison burger but still prefer the welfare burgers. Only takes about 20 minutes to assemble and twenty minutes to cook. Here's how to do it.
I start with 4 lbs of ground venison neck meat.

I then dice 8 ounces baby portobello mushrooms, 1/2 medium onion, & 4 Serrano peppers.

I then dice and fry 12 ounces bacon, just until starting to crisp. Remove bacon to cool and add the diced veggies to the grease. Sauté 4 minutes, add a couple splashes good drinking wine, I was out so I used cooking wine add 1 tsp coarse black pepper and cook another 4 minutes. Then let cool.

When cool add bacon and veggies along with the grease to the meat, add 2 cups sharp cheddar cheese and mix well.

Form into patties, make an indention in top and add bleau cheese, cover and seal with a small disc of meat

The secret ingredient, brush all over with spicy brown mustard. Place on smoker at 300 degrees for twenty minutes. No salt needed here.

PIG OUT
It made six 3/4 to 1 lb burgers. Total cost about five bucks. Yes you can have it your way for less.

These were way to thick, should have made 12 quarter pounders.
By the time it was on the bun with lettuce, tomatoes and pickles. I could barley get my mouth on it but I managed, may not have been pretty but what the heck.
