Grilled Shrimp and Rice

INGREDIENTS
2 tablespoons of oil (olive or canola)
2 tablespoons of lemon juice
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 pound of uncooked jumbo shrimp, peeled and deveined
Jasmine rice or white rice
minced fresh parsley

In a large bowl whisk the first 5 ingredients together and then add the shrimp and toss to coat. Refrigerate covered for 30 minutes or longer.
Thread shrimp onto skewers and then grill covered over medium heat for 6 to 8 minutes or till the shrimp turn pink, turning once. Serve over rice cooked by the directions and sprinkle with parsley.
I use a charcoal grill but you can use a gas grill or cook in oven on broil with shrimp about 4 inches from element.
Next time I going to sauté some onion and garlic in a little butter and cook the rice in it.
