That is a full Beef Brisket aka Dinosaur Tongue
When cooked right it is fantastic and by right all you add is smoke and heat
No rubs or seasonings
300° smoke for 4 hours or 170° internal then wrap in double foil and hold for 3 more hours as the fire burns out. :drool :drool :drool :drool

Looks fantastic Jerry, been cooking um that way for years. Only difference is I coat it heavy with kosher salt, and coarse ground black pepper. Then serve the sauce on the side. Always comes off fantastic. Noogie, steered you right.
