Buckboard Bacon

After removing the bone from two butts I got twenty pounds of bacon curing. Now for the 10 to 14 day wait. Drives me nuts, but worth the wait.

Do you smoke it after curing? Is it a sugar cure?

Yes Chad, I generally use Morton's sugar cure but I only know of one store where I can find it. I didn't want to make the drive, so I made my own as I have done many times. Plus they only carry the sugar cure and not the tender quick which is what most people use. Do not use the smoke flavor by Morton's, that is for ham curing over months. You can also buy or order High Mountain, or other brands. I like making my own so I can add different spices for a variety of flavor. Here is the basic recipe.
1 cup kosher salt
1/2 cup brown sugar
1TBLS black pepper
1 tsp pink curing salt

I have found that 10 days works well for me. Some go for seven days. I like the longer cure time.
Then rinse well with water and let soak for an hour and rinse again. Pat dry with paper towels, I hang from bacon hooks and start at 100 degrees to dry for an hour. Then crank up to 225 degrees apply smoke and remove when internal temperature reaches 145 degrees. Let cool in the fridge overnight slice and vac seal.
I also brush mine with real maple syrup prior to smoking, you can use honey, molasses or whatever flips your taste buds. Add spices to your liking. I use this same recipe for cured and sliced venison, makes great samies. In fact I am about to cure five pounds of hindquarters, I only go 7 days on venison.
