My first attempt

I hope these snack sticks are edible when I get through! I used about 6 lbs. of venison and 2 lbs. or so of pork butt. Ground it all with coarse plate, mixed in seasonings and cure, put it back through the fine plate, stuffed into 16mm smoke collagen casings. If I don't have butcher's twine, what can I use to seal the ends, or do I even have too?

You really don't need to flipper. I use butcher twine, but when your out just twist the ends.
You will learn as you go. I would have used less pork or none at all. Snack sticks ain't sausage.

It would have been a higher ratio of pork to deer, but I miscalculated the amount of seasoning to add, so I added in more deer. Shoot, I was mixing the seasoning in to the meat and thought "This sure is gonna be salty." That's when I realized my mistake.

I learned by trial and error, that I don't care for pork in a snack stick. They will often turn out mushy, from the fat. I prefer beef fat in mine, but it doesn't take much. Hope they turn out ok.

That's what I thought too. I can barely stuff 19mm, but would love to make 16mm

That's what I thought too. I can barely stuff 19mm, but would love to make 16mm

If they are done right they are good. I have had some that were like eating shoe strings.
I prefer the 19 mm.

They are 16 mm and I had to order a tube special..... I think it was 3/8.
I haven't finished em yet, but they aren't going to be very good. My smoker died on me.....finishing in the oven.

They shriveled a good bit, but aren't really tough and pretty tasty. Just picked up a new smoker and will finish them out the right way. It was fun doing this!

Well it is a 5 pound one. I must be super woman because the only thing difficult was keeping the stuffer on the counter. I couldn't use the clamps because they wouldn't fit on the counter edge.

Well it is a 5 pound one. I must be super woman because the only thing difficult was keeping the stuffer on the counter. I couldn't use the clamps because they wouldn't fit on the counter edge.

The ones that hung vertical didn't shrivel.ImageImage

It gets easier after a few times. I felt the same way the first time I made sausage.
There are a few tricks to the shrivel. With sausage, you cool down in a water bath instantly to keep them plump and firm. With snack sticks, let them hang until cool the longer the better. Then place in a brown paper bag in the fridge over night.
The fat content can effect the shrivel also, that is why I don't use it.
They do look good though.

Flipper, I am still having a problem looking at the pics. And calling those 16mm casings. A 16mm, should look like a Slim Jim, very tiny in diameter. Unless you over stuffed, which would not seem possible without blow outs. Where did you get the casings from ?

I will give you an A+, just for tackling it. Just don't give up, you will get it down pat and realize just how quickly you can whip up a batch. You will be impressing all your friends before you know it.

Thanks Terry for all your help. It just must be the way the photo looks, but they are 16mm. I started to take a pic of the wrapper to show I'm not mistaken. I ordered them from Walton's (along with the seasonings). I wanted them to be similar to Slim Jims. That's why I ordered that size. The only size LEM stuffer I saw was 5#, so that's what I ordered.
