Potato Soup

Chile is wonderful on a cold winter day.
But on a rainy damp day. Only a big pot of loaded potato soup will do.
We actually committed the sin of over indulgence yesterday.
When I say loaded. I mean potatoes, onions white & green, bacon, diced Kentucky legend ham, real butter, flour, chicken stock, milk salt and pepper, cheddar cheese, and sour cream.
Plus a whole bunch of love.

I have tried for years to find a really good recipe for potato soup, The best I ever had was made my an elderly lady and I never got her recipe.

I am sure you can adjust to your liking. Like you I have had trouble finding one that I truly enjoyed. But I have stuck with this one for a couple of years now and get rave reviews from those who partake of it.
The talk I have heard in Benton, is that flipper, makes the best potato soup in the world. I can't say because I have never tasted it. But feel like that many country folks can't be wrong. Maybe she will chime in.

I love potato soup and make one my family loves. But it takes real ingredients. Rea butter, real bacon. Do you like your potatoes cubed or totally mashed?

I thought I shared my recipe a year or two ago. I will again when I get home and access it. It calls for real ingredients as does Lady Hunter's and Terry's. I add the cooked potatoes at the end so they won't be totally mashed. I'm no cook. I just have a recipe that some folks happen to like.

Girl, I have to call you out on this one. The day I took the tamale recipe to the post office, the lady asked if I had ever had your potato soup. I told her I had never met you. I hinted on here after that, but you never gave it up. Since that time, I have heard others mention it. I do use all fresh ingredients in this one. Even grate my cheese, no shredded in a package. I am sold on it, but willing to try yours.
I to like my potatoes to have a bite so I don't cook them as per the recipe.

1 pound bacon diced
1 1/2 c. onion diced
1 c. carrots diced
1 c. celery diced
2 Tbsp. garlic minced
2 tsp. salt
2 tsp. Creole seasoning (tony's)
2 tsp. black pepper
1 tsp. cayenne pepper
1 Tbsp. garlic juice
3 pounds potatoes, peeled and cubed and cooked
1 qt. chicken stock
2 qts. heavy cream
1 1/2 c. cheddar cheese, shredded
1 1/4 c. sour cream
1/2 cup margarine
3/4 cup flour
1/2 cup green onions chopped fine

Fry bacon in a large pot. Drain and set aside. Saute onions, carrots, and celery in the bacon grease until the onions are soft and clear. Add garlic, salt, Creole seasoning, pepper, cayenne and garlic juice. Add chicken stock and bring to a boil. Add the heavy cream, cheese, sour cream and return to a boil. In another pan, make a light roux with the margarine and flour. Add to the soup. Add the potatoes and stir trying not to mash the potatoes too much. Add the green onions and bacon. Don't take short cuts.......

Personally, I like the chicken stock to be that which I saved from boiling a whole chicken rather than that from cans or a box. And the potatoes, I do like them cooked just right, but add them last so that all the stirring you do with the other stuff doesn't result in the potatoes making a slurry, so to speak. Margarine is butter in our house. Need to check my cholesterol!

Sounds wonderful. I also use chicken stock from boiled birds. I never buy the can or box stuff, although if you buy store bought chickens and boil them as I do I am quite sure it's the same.
As far as margin goes , I don't eat it, do a Google search and you won't either.

Butter is actually healthier for you than margarine. Look it up, it was not originally meant for human consumption.

Flipper, I like the rich potato slurry. So I use the sack of biguns potatoes from save a lot. They are over a pound each I cut them in large chunks so as they get stirred, I still have nice chunks and the slurry.

I like my potato soup to be less chunky so I run an electric mixer in it to break up the chunks.
I use it as a drink with a nice sandwich as a side dish.

I have a real good recipe for potatoe soup that I make in a programmable electric pressure cooker...if I can find it I'll post it up.

B.W.'s Tater Soup
3# taters...washed and cubed, leave the skin on.
1 large onion diced.
4 stalks of celery...stripped and diced.
1 can of beef broth.

I use a programmable pressure cooker and put all ingredients along with 3 cups water in the cooker and cook under pressure for 10 mins. Let the pressure reduce naturally and open cooker. I use an immersion blender to puree my soup and add a cup of heavy cream and salt and pepper. Serve in bowls and top with bacon bits, shredded cheese, croutons, and chopped green onions. Pretty good stuff.
