If you make sausage and freeze it without smoking it, can you smoke it later on? Do you have to dry it first? I would think so.Image

I freeze alot of my sausage fresh then just thaw and grill.

If you are making fresh sausage to cook on the grill, or stove under normal heat. You don't need the cure. It is used for smoking at low temperatures. Like Chad, I make a lot of fresh sausage, freeze and grill as needed.
