I cleaned one of our older hens. Slow cooked it in the crock pot and man....you talking about making some fine broth.
Took all the meat off bones and then added some carrots and noodles.
Fine eating. 10 times better flavor than I've ever had

Wow, that sounds like the soup my grandmother, and mother would make after killing the chickens. You won't find that in any can unless you can your own. And then it will be in a jar. You need to send Progresso, your recipe. Lol

Doubt you will find anyone who will kill a chicken. And it can't be made with those from the meat counter. Yours is the true meaning of organic.

We were given 24 roosters last July , I have to agree the home raised roosters we cooked and canned are far better than any store bought ones. It also takes a long time to clean and process 24 large roosters.

Ok question for ya. I’ve been raising some chickens from poults. Think I have 10 roosters out of the 25. When and what is best way to kill and clean.

It's a lot easier to skin them than picking them that's what I always do chop their head off and start skinning

I tried several ways but best way and quickest is use the limb pruner the ones with about 2 ft handle and the 2 inch blade that kinda curves....I think they are Called Loper'. Works every time

We used a hatchet to lop off the head and skinned them then gutted.
then cut up the way we wanted put the necks and backs in a big pot and boiled them down picked the meat from the bones and canned the broth. We tried a pressure cooker the last tome and it was a lot faster than boiling

I forgot to say....I use same limb pruner to cut the legs off and the end of wings , right after the head. Makes for a lot faster Process.

Thanks for the replies. Next question, what age do you process them. Mine are 4 months old and the breast isn’t filled out. About when would be the best time to give them the axe.

It depends how you are going to cook them. If you are going to fry them then they need be cleaned between 16-22 weeks. Older than that is best to boil down to crock pot them for dumplings or chicken spaghetti and such.
The breast are not going to be plump like the ones at the store.
I'd say clean one and cook it on grill or fryer and see how tenderness of them is. Then go from there. Older bird, even a couple years old really has good flavor but just have to slow cook it.

Thanks. I got 10 out of 25 that need the axe cause they are not going to produce eggs, just eat food.
Last question. Any advantage to keeping one rooster?
