bacon wrapped quail

Postby huntall » Sun Jun 10, 2018 1:44 pm

I cleaned 8 quail and left them whole and 2 young chicken roosters. I marinated the quail overnight in Italian dressing and a meat marinade. Then wrapped the quail in bacon and put on smoker along side the 2 whole chickens. I used pecan coals to cook.
No bought charcoal lighter or gas. Just pecan coals from fire pit and chunks of pecan wood. Man! It was good.
I never thought that my family would like the quail better any other way than fried. Well...we like it better smoked like this than fried. :drool
