Cajun Meat Pie Cajun Meat Pie

Written by Jerry, Jay and Julie Folse

Makes 2 Pies

2 lbs. ground meat (beef, pork, venison or any combination)
1 cup chopped onions
1 cup chopped bell pepper
½ cup chopped celery
1 tbsp. Creole or Wild Game Seasoning
1 tsp. black pepper
1 tsp. granulated garlic
½ cup chopped green onions
½ can sweet peas
1 cup baby carrots or sliced carrots
2 potatoes, diced
3-4 shakes of roux and gravy mix
1 to 1½ cups water
¼ to ½ lb. shredded cheese (use as much or as little as you like)
4 pie shells (Use Pillsbury shells, two per box, from the dairy department of your local supermarket. These are not frozen and bake better.)

Brown and drain ground meat. Add seasonings to the meat and cook on medium heat until they wilt. Next, sprinkle 3-4 hefty shakes of roux mix over the meat mixture, add 1 to 1½ cups of water, and then the carrots, potatoes, and peas. Cook on low to medium heat until the gravy thickens and the carrots and potatoes are tender(about 20 minutes). Place pie shells in Pyrex pie dishes. Divide the mixture evenly into the two pie shells; then sprinkle cheese over the meat pies and place a pie shell over the top of each. Make a few slits in the top of each pie and bake at 350°F until browned.
