You Eat With Your Eyes

Postby terry08 » Mon Aug 24, 2015 2:28 am

This was a test to check results of wood chips verses pellets. I think the results speak for themselves.

Friday nights smoke in the Masterbuilt 40 inch electric smoker. I wanted to try my A-Maze-N pellet tray which will generally produce 12 hours of smoke with all three rows filled. I injected ten birds with marinade, patted the skin dry and sprayed each one with canola oil then applied rub. After reading reviews on the pellet tray in the Masterbuilt, I did as most suggested, I removed the chip tube and chip pan so to get good air flow to the pellet tray. Set box temp to 250 degrees and timer to 4 hours. Had great blue smoke from the pellets. The birds came out with a beautiful mahogany color and wonderful taste. I left the pellet tray in to check smoke time. I got 11 hours of continuous smoke without having to ever check anything.

Saturday I did ten more birds using hickory chips in place of hickory pellets.
Using the smoker as is, I had to fill the chip tube about every 45 minutes or so to keep the smoke rolling I don't like babysitting a smoker so the A-Maze-N pellet tray once again wins hands down.
These birds were prepared same as Friday nights all temps and times were the same. You be the judge, as always for taste, presentation and set and forget it the pellets win over chips every time .

Hubtech, you can Google A-Maze-N and find them. You can get the tubes or tray, they work in any grill or smoker. They are great for cold smoking on electric smokers such as yours you can set it and walk away no need to babysit the chip tube. I have used mine in every grill and smoker I've owned.
