Chicken Salad

Sherrie and I live on this cool crisp salad, most of the summer. So cool and refreshing on hot summer days.
Serve on Texas Toast, with fresh leaf lettuce and a slice of tomato. Or just in a bowl. Sherrie, loves it on saltine crackers as a snack. You won't feel stuffed and will go back for seconds. And if you are like me, you will find yourself at the refrigerator in the middle of the night eating more.

Sorry for not posting it sooner.
This recipe is so simple. I did stumble upon something by accident. I usually use top quality mayo and pickle relish. I was out of both and didn't want to drive 20 miles to the grocery store. I decided to just go to dollar general. I bought the dg brand mayo and sweet relish just knowing it wasn't going to be edible. To my surprise, it made the salad better than ever.
I make a large batch so I use three whole chicken breasts.
Recipe :

3 whole breasts of chicken which I cook in the pressure cooker, or you can boil. See note below.

1/2 jar of dg mayo

1 jar of dg sweet relish

1 red onion coarsely diced

2 stalks celery fine diced

5 hard boiled eggs coarse chopped

Seedless grapes ( optional )


Black pepper, see note below.

Note:
I believe that the reason folks love this salad, is because of the texture.
I coarsely shred the chicken breasts by hand, never dice or use food processor.
I use a Vidalia Onion Chopper , which has two blades, small dice and large. I use the largest for the onions and eggs. And the small for the celery.

Mix all ingredients except pepper together, once mixed I shake pepper over the whole top of the salad and mix again, it seems to be the perfect amount when done that way. The salad requires no salt. I love it with the coarse chopped seedless grapes, for the hint of sweetness they add. Also if you add to much mayo, it will get soggy while in the fridge after a day.

Yep, that's pretty much the same way I do it and you are right Terry. So good during the hot summer with a tomato and saltines. I've always boiled my chicken, but putting it in the Instant pot would be ideal. I'm not opposed to dark meat and one of those whole Springer Mountain Farms chickens from Ramsey's or Piggly Wiggly would sure be a good one to try. Thanks for sharing.
